Shaw’s Has a Cork in It
Shaw’s Restaurant is owned by Bruce and Nancy Cork and managed by their daughter, Susie. An inn is also on site.Shaw’s Restaurant and Inn has been a go-to place for Fairfield County diners since 1975 when the Cork family opened it for business. These days, daughter Susie Cork runs the place, yet it remains business as usual – and sometimes not so usual.
Since it is known as a steakhouse, the enormous 20-ounce strip steak is a staple, as is the wildly popular Chicken Cordon Bleu with ham and aged Swiss. Shaw’s is also known for a one-pound Applewood Smoked Pork Chop.
“We don’t do everything quite that big all the time,” Susie Cork says with a chuckle. “I classify our food as American global. People want to see interesting things on the menu, and people just want their steaks.”
For example, one night recently she was serving a Spanish Beef Skewer and a Portuguese Crab and Salt Cod Fritter. The seafood is fresh at the award-winning establishment, which has a Mobile Guide three-star award and AAA three-diamond rating.
“It’s gratifying. It’s fun,” Cork says. “We get a lot of regulars that really care.”
Special dining experiences on Shaw’s calendar include two big wine tastings a year, with 30 wines and appetizers served. Cork also teaches classes in the restaurant’s cooking studio on Saturdays.
In addition to the 166-seat restaurant, the building houses 27 boutique hotel rooms, each with a different décor.
Cork’s Bar offers an extensive selection of wines, cognacs and single-malt sctoches in a comfortable setting decorated with brass and dark wood.
Shaw’s Restaurant and Inn, at 123 North Broad St., is open seven days a week for breakfast, lunch and dinner.
